Three Delicacies of Tianjin
Although Mr.Smith had been in TianJin for just half a year,he was already somewhat acquainted with the local traditions and customs, especially the food and drink culture. One day,Mr.Smith delightedly invited his American friends, who were visiting him,to sample the three famous delicacies of TianJin offered at Nanshi Food Street.
They first tasted“Ear-Hole Fried Cake”,a crisp but tender, sweet and delicous snack. Mr.Smith enjoyed it very much and told his friends that the deep-fried snack was made with wheat or glutinous rice flour. It originated in 1900 by a man named Liu Wanchun, who owned a shop named “Zeng Sheng Cheng”.
Because its name is a tongue twister and the shop was situated near Er Duo Yan Alley outside the Northern Gate in TianJin,people perferred to call the snack Er-Hole Fried Cake.
After that,Mr.Smith treated his friends to dinner in a “Goubuli Baozi”restaurant.During the meal,he explained the origin of Goubuli to them.He said that Goubuli Baozi was created in 1858 by a Chinese man named Gao Guiyou of Wuqing Country.
It is said that his father was forty years old when he was born and given the nickname GouZi，as it was expected that it would be easier to feed and keep him as a babydog. When Gou Zi was fourteen years old, he became an apprentice in a restaurant speciailzing in stuffed buns。
Being deligent and honest,he eventually opened a restaurant on his own. What made his stuffed buns so delicious ,but not greasy ,were the ingredients. The process of making them,in addition to the special flavor, appealed to an increasing number of customers.
Gou Zi’s business continued to prosper， He became too busy to greet his customers. Therefore, people often teased him by saying that Gou Zi only cared about selling stuffed buns but not about the people. As time passed, people changed Gou Zi’s name to Goubuli and his stuffed bun to Goubli Baozi, which literally means “dogs are not interested in stuffed buns”.
Mr smith’s American friends listened to the story over dinner and thought it was very intersting. They did indeed think that Goubuli Baozi tasted delicious and had left a deep impression on them.
Finally,Mr.Smith took them to the shop , “Gui Fa Xiang Ma Hua”（a kind of fried dough twist). He said because of the well selected ingredinets,Ma Hua was renowned for its unique sweet flavor and crispness. It could be preserved for three months in the Spring and Autumn, and two months in the summer. It also makes an excellent gift for relatives and friends.
Mr.Smith then bought some Ma Hua for his friends to take back home to America and encouraged them to share the famous local flavors of Tianjin with their families.
